Ingredients
  

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme (or fresh thyme, chopped)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare a baking sheet by lining it with parchment paper for easy clean-up.

      In a large bowl, combine balsamic vinegar, honey, olive oil, garlic powder, dried thyme, salt, and pepper. Whisk until well combined.

        Add the carrots to the bowl and toss them in the honey balsamic mixture until they are evenly coated.

          Spread the carrots out on the prepared baking sheet in a single layer. Make sure they are not crowded to ensure even roasting.

            Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, tossing them halfway through to ensure even cooking.

              Remove from the oven and toss the carrots gently to coat them in any remaining glaze on the baking sheet.
