3 eggs, separated

1/2 cup all-purpose flour

1/4 cup milk

1/2 tsp baking powder

Vegetable oil for frying

Tomato sauce for serving

2 lbs pork shoulder, diced

1 can (15 oz) hominy, drained

4 cups chicken broth

3 guajillo chiles, seeds and stems removed

3 cloves garlic

1 onion, quartered

1 tsp cumin

Salt to taste

Toppings: radishes, cilantro, lime, cabbage

1 cup sugar (for caramel)

1 can (14 oz) sweetened condensed milk

1 can (12 oz) evaporated milk

4 large eggs

1 tablespoon vanilla extract

Instructions
 

Marinate the pork in adobo sauce, cumin, oregano, pineapple juice, and garlic for at least 2 hours or overnight in the refrigerator.
