Ingredients
  

2 large boneless, skinless chicken breasts

4 medium potatoes, diced

1 cup fresh spinach, chopped

1 cup mushrooms, sliced

1 cup shredded Swiss cheese

1/2 cup cooked, crumbled bacon

1/2 cup honey mustard dressing

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and onion powder. In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken and sear for about 5 minutes on each side until golden brown. Remove from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.

        Sauté the Vegetables: Add the sliced mushrooms and chopped spinach to the skillet with the potatoes. Continue to cook for an additional 5 minutes, stirring frequently.

          Combine the Ingredients: Stir in the honey mustard dressing, crumbled bacon, and half of the Swiss cheese until everything is combined. Place the seared chicken breasts back into the skillet.

            Add Cheese and Bake: Sprinkle the remaining Swiss cheese on top of the chicken. Cover the skillet with a lid or aluminum foil and transfer it to the oven. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are fork-tender.

              Garnish and Serve: Once out of the oven, let it rest for a few minutes. Garnish with fresh parsley if desired and serve hot.
