2 cups pumpkin puree (canned or fresh roasted)

2 cups sweet potatoes, peeled and cubed

1 medium onion, chopped

2 garlic cloves, minced

4 cups vegetable broth (low-sodium)

1 can (13.5 oz) coconut milk

1 tablespoon olive oil

1 teaspoon ground turmeric

1 teaspoon ground ginger

1 teaspoon ground cinnamon

Salt and pepper to taste

1 tablespoon apple cider vinegar

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prep the Vegetables: Begin by peeling and cubing the sweet potatoes. Chop the onion and mince the garlic.

    Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-5 minutes).

      Cook the Sweet Potatoes: Add the cubed sweet potatoes to the pot, stirring to combine. Cook for an additional 5 minutes, allowing the sweet potatoes to soften slightly.

        Add Spices: Stir in ground turmeric, ginger, and cinnamon. Cook for 1-2 minutes to toast the spices and enhance their flavors.

          Combine with Pumpkin and Broth: Add the pumpkin puree and vegetable broth to the pot. Stir well to ensure everything is combined. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the sweet potatoes are fork-tender.

            Blend the Soup: Remove the pot from the heat. Using an immersion blender, blend the soup until smooth. If using a traditional blender, blend in batches and return the soup to the pot.

              Creamy Finish: Stir in the coconut milk and apple cider vinegar. Adjust seasoning with salt and pepper as needed. Warm the soup over low heat for another 5 minutes.

                Serve: Ladle the soup into bowls and garnish with fresh cilantro or parsley, if desired. Enjoy with crusty bread or a side salad!
