1 pound ground turkey

1/2 cup apple cider

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon ground cinnamon

1 egg

1 cup apple cider for simmering

1 tablespoon olive oil

Fresh parsley, chopped for garnish (optional)

In a large mixing bowl, combine the ground turkey, 1/2 cup apple cider, breadcrumbs, chopped onion, minced garlic, sage, thyme, salt, pepper, cinnamon, and egg. Mix gently until all ingredients are well combined, being careful not to overmix as this can make the meatballs tough.

    Preheat your oven to 375°F (190°C). While the oven is heating, shape the turkey mixture into meatballs, about 1 to 1.5 inches in diameter.

      In a skillet over medium heat, add the olive oil. Once hot, add the meatballs in batches (don’t overcrowd the pan) and brown them on all sides, about 4-5 minutes per batch. Remove the browned meatballs and place them on a plate.

        In the same skillet, add 1 cup of apple cider and bring to a gentle simmer. Carefully return the browned meatballs to the skillet, ensuring they are submerged in the cider.

          Cover the skillet and let the meatballs cook for about 20-25 minutes, until cooked through (internal temperature should reach 165°F or 75°C). You can also transfer the skillet to the preheated oven after browning, allowing them to bake for an additional 15-20 minutes for enhanced flavors.

            Once cooked, remove the meatballs from the skillet, allowing any excess sauce to drain. Optionally, reduce the sauce over medium heat if you want it thicker.

              Serve the meatballs warm, drizzled with the apple cider sauce, and garnish with chopped parsley if desired.
