Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon brown sugar

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 teaspoon vanilla extract

1 medium apple (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup chopped walnuts or pecans (optional)

Maple syrup, for serving

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, ground cinnamon, salt, and brown sugar until evenly combined.

Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to over-mix. Fold in the diced apple and chopped nuts (if using).

Preheat Skillet: Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or oil.

Cook Pancakes: Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes until golden brown on both sides.

Serve: Remove the pancakes from the skillet and keep warm while you cook the remaining batter. Serve warm with a drizzle of maple syrup, extra diced apples, and a sprinkle of cinnamon if desired.
