2 large chicken breasts, thinly sliced

1 cup ripe mango, pureed

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon grated fresh ginger

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water

1 pack of egg roll wrappers

1/4 cup green onions, finely chopped

Sesame seeds for garnish

Cooking oil for frying

Instructions
 

Prepare the Marinade: In a bowl, combine the mango puree, soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Mix well and set aside.

    Marinate the Chicken: Place the thinly sliced chicken in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.

      Cook the Chicken: In a skillet over medium heat, add the marinated chicken (reserve marinade) and cook until fully cooked, about 5-7 minutes. Add the cornstarch mixture to the skillet and stir until the sauce thickens. Remove from heat and let cool slightly.

        Assemble the Twists: Take an egg roll wrapper and place about 2 tablespoons of the chicken mixture at the center. Fold the bottom corner over the filling, then fold in the sides. Roll up tightly until the top corner is sealed. Repeat with remaining wrappers and filling.

          Fry the Twists: Heat oil in a deep pan over medium-high heat. Once hot, gently add the twists in batches, frying until golden and crispy, about 3-4 minutes per side.
