1 pound dried pinto beans

8 cups water, plus more for soaking

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 jalapeño pepper, seeded and diced

2 medium tomatoes, diced

1/4 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt, or to taste

1/2 pound bacon, diced (or chorizo for a vegetarian version)

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges (for serving)

Instructions
 

Soak the Beans: Place the dried pinto beans in a large bowl and cover them with water. Let them soak overnight or for at least 6 hours. Drain and rinse the beans when ready to cook.

    Cook the Beans: In a large pot, combine the soaked beans with 8 cups of fresh water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and let simmer, covered, for about 1 to 2 hours, or until the beans are tender. Make sure to stir occasionally and add more water if needed.

      Prepare the Flavor Base: In a skillet, heat the olive oil over medium heat. Add the diced bacon (or chorizo) and cook until crispy, about 5-7 minutes. Add the diced onion and sauté until soft, approximately 3-4 minutes. Stir in the minced garlic, diced jalapeño, cumin, smoked paprika, and black pepper. Cook for an additional 2 minutes until fragrant.

        Combine Ingredients: Once the beans are tender, add the sautéed mixture into the pot with the beans. Stir in the diced tomatoes and salt. Let the mixture simmer together for about 20 minutes so that the flavors meld.

          Final Touches: Taste and adjust seasoning, adding more salt if necessary. Stir in the chopped cilantro just before serving.

            Serve: Ladle the charro beans into bowls and serve with lime wedges on the side. They pair beautifully with warm tortillas or cornbread.
