1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 pound Italian sausage (mild or spicy, based on preference)

6 cups chicken broth

1 can (14.5 oz) diced tomatoes, with juice

1 teaspoon dried oregano

1 teaspoon dried thyme

1 cup carrots, sliced

1 cup celery, chopped

9 oz cheese tortellini (fresh or frozen)

4 cups fresh spinach, roughly chopped

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and cook for an additional minute, stirring frequently.

      Remove the casing from the Italian sausage and add the sausage to the pot. Cook until browned, breaking it into smaller pieces with a spatula, about 5-7 minutes.

        Pour in the chicken broth and add the diced tomatoes, oregano, thyme, carrots, and celery. Increase the heat to bring the mixture to a boil.

          Once boiling, reduce the heat to a simmer and let it cook uncovered for about 10-15 minutes, or until the vegetables are tender.

            Stir in the tortellini and cook according to package instructions (typically 3-5 minutes).

              Just before serving, fold in the chopped spinach and allow it to wilt, about 1-2 minutes. Season the soup with salt and pepper to taste.

                Serve hot, garnished with grated Parmesan cheese and fresh parsley on top.
