1 lb chicken breast tenders

1 cup almond flour

1/2 cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

2 large eggs

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional for heat)

Olive oil spray or melted coconut oil for greasing

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Dredging Station: In a shallow dish, combine almond flour, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, pepper, and cayenne pepper. Mix until well combined.

      Beat Eggs: In another shallow dish, beat the eggs until frothy. This will be your wet batter.

        Coat Chicken: Dip each chicken tender into the eggs, letting any excess drip off, then roll it in the almond flour mixture, ensuring it's evenly coated. Place the coated tenders on the prepared baking sheet.

          Spray for Crispiness: Lightly spray the tops of the tenders with olive oil or brush them with melted coconut oil to help them crisp up during baking.

            Bake: Bake in the preheated oven for 15-20 minutes, flipping halfway through, until the tenders are golden brown and internal temperature reaches 165°F (74°C).

              Rest and Serve: Once done, remove from the oven and let them rest for a few minutes before serving. Enjoy with your favorite low-carb dipping sauce!
