The foundation of any great meatloaf is, of course, the meat. When it comes to BBQ-glazed mini meatloaf, the choice of ground meat can significantly influence the flavor and texture of the dish. The two most common options are ground beef and ground turkey.

BBQ-Glazed Mini Meatloaf Magic

1 lb ground beef (or ground turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely diced onion

1/4 cup finely diced bell pepper (any color)

1/4 cup milk

1 large egg

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp dried oregano

1/2 tsp salt

1/2 tsp black pepper

1 cup BBQ sauce (plus extra for glazing)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a mini loaf pan.

    Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion, bell pepper, milk, egg, garlic, Worcestershire sauce, dried oregano, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.

      Shape the Meatloaves: Divide the mixture into 8 equal portions and shape each portion into a mini loaf. Place them on the prepared baking sheet or in the mini loaf pan, spacing them apart.

        Glaze the Meatloaves: Brush each mini loaf generously with BBQ sauce, reserving some for later glazing.

          Bake: Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through (internal temperature should be 160°F or 70°C).

            Final Glaze: Remove the meatloaves from the oven and brush them again with BBQ sauce. Return them to the oven for an additional 5 minutes to caramelize the glaze.

              Serve: Remove from the oven and let them rest for a few minutes. Garnish with fresh parsley before serving.

                Enjoy: Serve warm alongside your favorite sides such as mashed potatoes, coleslaw, or grilled veggies.
