20 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus more for topping

1/2 cup grated Parmesan cheese

1 large egg

2 cups fresh spinach, chopped

1 cup cooked and crumbled Italian sausage (optional for a meaty version)

2 cups marinara sauce

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, chopped spinach, Italian sausage (if using), minced garlic, oregano, basil, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff the Shells: Carefully take each cooked shell and fill it with about 2 tablespoons of the cheese mixture, ensuring they are packed but not overflowing.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.

            Arrange the Stuffed Shells: Place the stuffed shells on top of the marinara sauce, open side up. Pour the remaining marinara sauce over the shells, and sprinkle additional shredded mozzarella cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with chopped fresh parsley. Serve warm and enjoy the festive flavors!
