Ingredients

8 oz fusilli or rotini pasta

1 cup cooked shrimp, peeled and deveined

1 cup cooked crab meat (or imitation crab)

1 cup cooked mussels (optional)

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup bell pepper, diced (any color)

1/2 cup peas (fresh or frozen)

1 cup mayonnaise

1/2 cup sour cream

2 tablespoons lemon juice

1 teaspoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the fusilli or rotini pasta and cook according to the package instructions until al dente. Drain, rinse with cold water, and set aside to cool.

Prepare Seafood: In a large mixing bowl, combine the cooked shrimp, crab meat, and mussels (if using). If you prefer, chop the seafood into bite-sized pieces for easier serving.

Mix Fresh Vegetables: In another bowl, mix together the halved cherry tomatoes, diced cucumber, chopped red onion, diced bell pepper, and peas. Toss to combine.

Create the Dressing: In a medium bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth and fully combined.

Combine Ingredients: In the large bowl with the seafood, add the cooled pasta and the mixed fresh vegetables. Pour the dressing over the top and gently fold everything together until evenly coated.

Chill: Cover the salad with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together.

Serve: Before serving, give the salad a gentle stir and taste for seasoning, adding additional salt, pepper, or lemon juice as desired. Garnish with freshly chopped parsley.
