1 whole chicken (about 3-4 pounds), cut into pieces

8 cups low-sodium chicken broth

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

3 stalks celery, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

8 ounces egg noodles

2 cups fresh spinach or kale (optional)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken pieces and sear until browned on all sides. Remove and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion, and sauté for about 3-4 minutes until translucent. Add in the minced garlic and sauté for an additional minute.

      Build the Soup Base: Add the sliced carrots and celery to the pot. Pour in the chicken broth and add the seared chicken back into the pot. Stir in the thyme, rosemary, bay leaves, salt, and pepper.

        Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.

          Shred the Chicken: Remove the chicken pieces from the pot and allow them to cool slightly. Shred the meat using two forks and discard the skin and bones. Return the shredded chicken to the pot.

            Add the Noodles: Stir in the egg noodles and cook according to package instructions until tender, usually about 7-10 minutes.

              Add Greens: If using, stir in the fresh spinach or kale during the last few minutes of cooking until wilted.

                Final Seasoning: Taste the soup and adjust seasoning with more salt and pepper if needed. Remove the bay leaves before serving.
