1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

1 cup hot sauce (like Frank’s RedHot)

2 tbsp unsalted butter, melted (or vegan butter)

1 tsp honey or maple syrup (optional for sweetness)

Olive oil spray (or regular olive oil for drizzling)

Instructions
 

Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare Batter: In a mixing bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth. The batter should be thick enough to coat the cauliflower but not too thick.

      Coat Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off before placing it on the prepared baking sheet. Ensure the florets are evenly coated.

        Bake First Time: Lightly spray or drizzle olive oil over the battered cauliflower and bake for 20-25 minutes or until golden and crispy, flipping halfway through.

          Prepare Buffalo Sauce: While the cauliflower bakes, combine the hot sauce, melted butter, and honey or maple syrup in a small saucepan over low heat. Stir until well mixed and warmed through.

            Coat in Sauce: Once the cauliflower is done baking, remove it from the oven and immediately toss the hot florets in the Buffalo sauce until well coated.

              Bake Again: Return the sauced cauliflower to the baking sheet and bake for another 10-15 minutes until crispy and the sauce is slightly caramelized.
