Cajun Beef Linguine in Creamy Velveeta

8 oz linguine pasta

1 lb ground beef

1 cup Velveeta cheese, cubed

1/2 cup heavy cream

1 medium bell pepper, diced (red or green)

1 small onion, diced

2 cloves garlic, minced

1 tbsp Cajun seasoning

1/2 tsp black pepper

1/2 tsp salt

2 tbsp olive oil

1/4 cup green onions, sliced (for garnish)

Optional: 1/2 cup diced tomatoes (fresh or canned)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper and sauté until they soften, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

      Add the Ground Beef: Increase heat to medium-high and add the ground beef. Season with Cajun seasoning, black pepper, and salt. Cook until the beef is browned, breaking it apart with a spatula, about 6-8 minutes. If using, stir in diced tomatoes.

        Make the Creamy Sauce: Lower the heat to medium and add the cubed Velveeta and heavy cream to the skillet with the beef mixture. Stir continuously until the cheese is melted and the sauce is smooth.

          Combine Pasta and Sauce: Add the cooked linguine to the skillet, tossing it gently to coat all the pasta with the creamy sauce. Let it cook for an additional 2-3 minutes to heat through.

            Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve immediately. Enjoy your flavorful Cajun beef linguine!
