1 lb sirloin steak, cut into bite-sized tips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

12 oz rigatoni pasta

2 cups heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 clove garlic, minced

1 small onion, finely chopped

1 bell pepper, diced (any color)

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Steak: In a bowl, toss the steak tips with Cajun seasoning, making sure they are well coated. Let them marinate for at least 15 minutes.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.

      Sauté Veggies: In a large skillet over medium heat, add olive oil. Once hot, add the onion and bell pepper, sautéing until they are softened and fragrant, about 5 minutes. Add the minced garlic and continue to sauté for another minute.

        Cook the Steak: Push the sautéed veggies to one side of the skillet, and add the seasoned steak tips to the other side. Cook the steak for about 3-4 minutes, or until browned and cooked to your desired doneness. Stir to combine with the veggies.

          Make the Sauce: Reduce the heat to low and stir in the heavy cream, allowing it to heat through. Sprinkle in the smoked paprika, and gradually add the grated Parmesan and shredded mozzarella cheese, stirring until melted and creamy. If the sauce is too thick, you can add a splash of pasta water to achieve your preferred consistency.

            Combine: Add the cooked rigatoni to the skillet, tossing everything together until the pasta is well coated in the cheesy sauce. Taste and season with salt and pepper as needed.
