Caprese Stuffed Portobellos

4 large Portobello mushrooms, cleaned and stems removed

1 cup cherry tomatoes, halved

8 oz fresh mozzarella cheese, diced

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1/4 teaspoon crushed red pepper flakes (optional)

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine the halved cherry tomatoes, diced mozzarella, chopped basil, olive oil, balsamic vinegar, minced garlic, salt, and pepper. If you like a bit of heat, add the crushed red pepper flakes.

      Gently mix all the ingredients until well combined, being careful not to mash the tomatoes or mozzarella.

        Place the cleaned Portobello mushrooms, open side up, on a baking sheet lined with parchment paper.

          Generously fill each mushroom cap with the Caprese mixture, pressing it down slightly to fit.

            Roast in the preheated oven for about 20 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.

              Once out of the oven, drizzle with balsamic glaze if desired and sprinkle with additional fresh basil for garnish.
