1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 1/2 cups diced apples (preferably Granny Smith)

1 cup caramel bits

1/2 cup chopped walnuts or pecans (optional)

Sea salt for sprinkling (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).

      Beat in the eggs one at a time, then mix in the vanilla extract until fully incorporated.

        In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            Fold in the diced apples, caramel bits, and nuts (if using) until evenly distributed throughout the cookie dough.

              Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

                Sprinkle a touch of sea salt on top of each cookie dough ball if desired, for an added contrast in flavor.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
