1 large head of cauliflower, cut into florets

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

½ cup sliced pepperoni (or your choice of toppings)

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Cauliflower: In a food processor, pulse the cauliflower florets until they resemble rice grains.

      Microwave Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl, cover with plastic wrap, and microwave on high for about 5-6 minutes, or until slightly tender. Let it cool before handling.

        Remove Moisture: Once cooled, place the cauliflower in a clean kitchen towel and wring out excess moisture to ensure your casserole doesn't become soggy.

          Mix Ingredients: In a large bowl, combine the squeezed cauliflower, olive oil, garlic powder, onion powder, Italian seasoning, salt, pepper, and half of the mozzarella cheese. Mix well.

            Press into Dish: Transfer the mixture into a greased 9x13 inch casserole dish, pressing it down to form a solid base.

              Add Sauce and Toppings: Pour the marinara sauce over the cauliflower crust. Spread remaining mozzarella cheese on top, sprinkle with pepperoni slices, and finish with grated Parmesan cheese.

                Bake: Place the casserole in the oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden brown.
