Cheesy Beef Taco Lasagna

1 lb ground beef

1 packet taco seasoning

1 can (15 oz) refried beans

1 cup salsa (mild or spicy, to taste)

9 lasagna noodles

2 cups shredded cheddar cheese

2 cups shredded Mexican cheese blend

1 cup sour cream

1 can (15 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

Fresh cilantro (for garnish, optional)

Sliced jalapeños (for garnish, optional)

Instructions
 

Prepare the Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel.

    Cook the Beef: In a large skillet over medium heat, heat the olive oil. Add the diced onion and minced garlic, sautéing until the onion is translucent. Add the ground beef and cook until browned. Drain excess fat.

      Season the Beef: Stir in the taco seasoning and 1/2 cup of salsa. Mix well to combine and let it simmer for 2-3 minutes.

        Assemble the Lasagna: Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom. Layer 3 lasagna noodles over the salsa. Add half of the refried beans in dollops over the noodles, spreading gently. Add half of the beef mixture, followed by one cup of the cheddar cheese, and half of the sour cream.

          Continue Layering: Repeat the layering process: add another 3 noodles, the remaining refried beans, the other half of the beef mixture, one cup of Mexican cheese blend, and another cup of sour cream. Top with the final 3 noodles, the remaining salsa, diced tomatoes, and the remaining cheese (both cheddar and Mexican blend).

            Bake: Cover the lasagna with aluminum foil (avoid touching the cheese) and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

              Cool & Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh cilantro and sliced jalapeños if desired.
