1 (9 oz) package cheese tortellini

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup sliced mushrooms

1 (14 oz) can diced tomatoes, undrained

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for heat)

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Salt and pepper, to taste

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, bell pepper, and sliced mushrooms, cooking for another 5 minutes until the vegetables are tender.

      Combine Ingredients: Add the drained diced tomatoes (with juices), Italian seasoning, red pepper flakes (if using), and marinara sauce to the skillet. Stir well to combine and let simmer for 5 minutes.

        Mix Tortellini and Cheese: Add the cooked tortellini to the skillet and gently fold to combine with the sauce and veggies. Sprinkle the mozzarella and half of the Parmesan cheese over the top. Mix well until the cheese is melted and everything is evenly coated. Season with salt and pepper to taste.

          Serve: Remove from heat and sprinkle the remaining Parmesan cheese over the top. Garnish with fresh basil leaves for an extra touch of flavor if desired.
