Cheesy Taco Baked Spaghetti

Ingredients
  

8 oz spaghetti

1 lb ground beef or turkey

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (frozen or canned)

1 cup sour cream

2 cups shredded cheddar cheese

1 cup shredded pepper jack cheese

1/2 cup diced green onions (for garnish)

Salt and pepper, to taste

1 tbsp olive oil

Instructions
 

Preheat Oven: Start by preheating your oven to 350°F (175°C).

    Cook Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

      Prepare Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Add Taco Seasoning: Stir in the taco seasoning along with the diced tomatoes, black beans, and corn. Mix well and cook for an additional 5 minutes until heated through. Season with salt and pepper to taste.

          Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti, taco beef mixture, and sour cream. Stir until everything is well combined.

            Layer in Baking Dish: Transfer half of the spaghetti mixture into a greased 9x13 inch baking dish. Sprinkle half of the cheddar and pepper jack cheese over the top. Add the remaining spaghetti mixture and top with the remaining cheese.

              Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

                Garnish & Serve: Once out of the oven, allow it to cool for a few minutes. Garnish with chopped green onions before serving.
