Chicken Scampi with Garlic Parmesan Rice

For Chicken Scampi:

1 lb boneless, skinless chicken breasts, thinly sliced

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice level)

1 cup chicken broth

1/2 cup dry white wine (e.g., Sauvignon Blanc)

Juice of 1 lemon

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

For Garlic Parmesan Rice:

1 cup jasmine or basmati rice

2 cups chicken broth

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Garlic Parmesan Rice:

    - Rinse the rice under cold water until the water runs clear. This removes excess starch.

      - In a medium saucepan, heat 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

        - Add the rinsed rice to the pan, stirring to coat the rice with butter and garlic. Toast the rice for about 2-3 minutes.

          - Pour in 2 cups of chicken broth and a pinch of salt. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

            - Stir in grated Parmesan cheese and season with salt and pepper to taste. Fluff with a fork and sprinkle with parsley.

              Cook the Chicken Scampi:

                - In a large skillet over medium-high heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil.

                  - Season the sliced chicken breasts with salt and pepper. Once the butter and oil are hot, add the chicken and sauté until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

                    - In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

                      - Pour in the chicken broth and white wine, bring to a simmer. Let the sauce reduce for about 3-5 minutes to concentrate the flavors.

                        - Stir in the lemon juice and return the cooked chicken to the skillet. Toss to coat the chicken evenly in the sauce and heat through for another 2-3 minutes.

                          Serve:

                            - Serve the Chicken Scampi over a generous scoop of Garlic Parmesan Rice.

                              - Garnish with fresh parsley and lemon wedges on the side.
