1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon chili powder

¼ teaspoon cayenne pepper (adjust to taste)

Juice of 1 lime

Corn tortillas (8-10 small)

1 cup diced onion

1 cup chopped fresh cilantro

1 avocado, sliced

½ cup crumbled queso fresco or feta cheese

Lime wedges for serving

Marinate the Chicken: In a medium bowl, combine the olive oil, minced garlic, cumin, paprika, chili powder, cayenne pepper, salt, pepper, and lime juice. Add the chicken thighs, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and grill or pan-sear for about 5-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C) and has nice charred grill marks. Remove from heat and let it rest for a few minutes before slicing.
