Ingredients

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/3 cup cocoa powder

1 cup creamy peanut butter

1/2 cup semi-sweet chocolate chips

1/2 cup powdered sugar, for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, cocoa powder, and salt until well combined. Set aside.

Cream the Butters and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar with a hand mixer or stand mixer until creamy and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Add in the egg and vanilla extract, mixing until well combined.

Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.

Chill the Dough: For best results, chill the dough in the refrigerator for 30 minutes. This will help the cookies maintain their shape while baking.

Prepare the Filling: In a separate bowl, mix the peanut butter and chocolate chips until well combined to create your gooey filling.

Shape the Cookies: Using a spoon, take about a tablespoon of cookie dough and flatten it slightly in your palms. Place a teaspoon of the peanut butter filling in the center, then fold the cookie dough around the filling and roll it into a ball. Repeat with remaining dough.

Bake: Place the cookie balls on the prepared baking sheet, spaced 2 inches apart. Bake for 10-12 minutes, until the edges are set but the center is still soft.

Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Dust the cookies with powdered sugar before serving for an extra touch. Enjoy the warm, gooey center!
