2 ¾ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

¾ tsp nutmeg (freshly grated preferred)

½ tsp cinnamon

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 tsp vanilla extract

1 tsp rum extract (or 2 tbsp rum)

1 cup powdered sugar (for frosting)

2-3 tbsp eggnog (for frosting)

Extra nutmeg for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, nutmeg, and cinnamon. Set aside.

      Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

        Add Egg and Extracts: Beat in the egg, vanilla extract, and rum extract (or rum) until well combined.

          Combine Dry and Wet Ingredients: Gradually mix in the dry ingredient mixture until just combined, being careful not to overmix.

            Shape the Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

                Make the Frosting: In a bowl, mix the powdered sugar with eggnog until you reach a good spreading consistency. Add more eggnog or powdered sugar as needed to achieve your desired thickness.

                  Frost the Cookies: Once the cookies are completely cool, frost with the eggnog icing and sprinkle a touch of nutmeg on top for garnish.
