Cinnamon Maple Peach Bread

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup maple syrup

2 large eggs

1 teaspoon vanilla extract

1 cup ripe peaches, peeled and diced (about 2 medium peaches)

½ cup chopped walnuts or pecans (optional)

1 tablespoon sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter, brown sugar, and maple syrup together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; do not overmix.

            Fold in Peaches and Nuts: Carefully fold in the diced peaches and chopped walnuts or pecans if using. The mixture should be thick, resembling a batter.

              Prepare for Baking: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle the tablespoon of sugar on top for a nice crust.

                Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool: Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Serve: Slice and serve warm or at room temperature. This bread is delightful on its own or with a slather of butter.
