2 ½ cups all-purpose flour

1 cup unsalted butter, softened

¾ cup powdered sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract

½ teaspoon salt

¾ cup raspberry jam (or any jam of your choice)

Prepare the dough: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the egg, vanilla extract, and almond extract, mixing until well combined.

    Combine dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this mixture to the creamed butter mixture, stirring until the dough comes together.

      Chill the dough: Divide the dough into two balls, flatten them slightly into disks, wrap them in plastic wrap, and refrigerate for at least 1 hour or overnight for optimal flavor.

        Preheat the oven: When ready to bake, preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

          Roll out the dough: On a floured surface, roll out each disk to about ¼ inch thick. If the dough is too sticky, sprinkle a little additional flour as needed.

            Cut the cookies: Use a linzer cookie cutter (or two different-sized round cutters) to cut out cookies. Make sure to cut out the center of half the cookies to create the window for the jam.

              Bake: Transfer the cut cookies to the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden. Allow them to cool completely on wire racks.

                Assemble the cookies: Spread about 1 teaspoon of raspberry jam on the solid cookies. Place the cookies with cutouts on top, pressing down gently.

                  Dust with powdered sugar: Before serving, dust the tops of the cookies with powdered sugar for a festive touch.
