1 cup wild rice, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 small butternut squash, peeled and diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

6 cups vegetable broth

1 cup kale, chopped

1 cup mushrooms, sliced (cremini or button)

1 cup coconut milk (or heavy cream for richness)

Salt and pepper to taste

Fresh parsley for garnish

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until they are translucent, about 3-5 minutes.

    Add Vegetables: Stir in the carrots, celery, and butternut squash, cooking for another 5-7 minutes until slightly softened.
