Ingredients
  

1 lb (450g) mixed mushrooms (e.g., cremini, shiitake, button), sliced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

3 tbsp olive oil

2 tbsp unsalted butter

1 tsp dried thyme

1 tsp salt, adjust to taste

1/2 tsp black pepper, adjust to taste

Fresh parsley, chopped (for garnish)

1.5 lbs (680g) chicken thighs, boneless and skinless

1 can (400ml) coconut milk

2 tbsp olive oil

1 onion, chopped

4 cloves garlic, minced

1 red bell pepper, diced

2 tbsp tomato paste

1-2 fresh red chilies, chopped (adjust to taste)

1 tsp paprika

1 tsp cumin

1 tbsp lime juice

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil and butter over medium heat.

    Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the sliced mushrooms and cook until they release their moisture and start to brown, approximately 10 minutes.

          Sprinkle in the dried thyme, salt, and pepper, mixing well.

            Pour in the broth, bring to a boil, then reduce to a simmer. Let it cook for 20 minutes.

              Using an immersion blender, blend the soup until smooth, or transfer it in batches to a blender.

                Stir in the heavy cream and heat through without boiling.

                  Taste and adjust seasoning if necessary.

                    Serve hot, garnished with fresh parsley.

                            Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

                              Stir in the minced garlic and cook for another minute until fragrant.

                                Add the diced red bell pepper and chopped chilies, cooking for a few more minutes until slightly softened.

                                  Mix in the tomato paste, paprika, and cumin, stirring well to combine.

                                    Add the chicken thighs to the skillet, coating them in the spice mixture and cooking for about 5-7 minutes until browned.

                                      Pour in the coconut milk and bring to a gentle simmer. Cover and let it cook for 20-25 minutes until the chicken is cooked through and tender.

                                        Stir in the lime juice and season with salt and pepper to taste.

                                          Serve over rice or with crusty bread, garnished with fresh cilantro.
