1 medium roasted sweet potato, peeled and cooled

1 cup unsweetened almond milk (or milk of choice)

1/2 banana, frozen

1 tablespoon almond butter (or any nut/seed butter)

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon maple syrup (or honey)

1/2 teaspoon vanilla extract

A pinch of salt

Ice cubes (optional, for a colder smoothie)

Instructions
 

Begin by roasting the sweet potato. Preheat your oven to 400°F (200°C). Prick the sweet potato several times with a fork, place it on a baking sheet, and roast for about 45-60 minutes, or until tender. Allow it to cool, then peel and set aside.

    In a blender, combine the roasted sweet potato, almond milk, frozen banana, almond butter, ground cinnamon, nutmeg, maple syrup, vanilla extract, and a pinch of salt.

      Blend on high speed until the mixture is smooth and creamy. If you prefer your smoothie chilled, add a handful of ice cubes and blend again until frosty.

        Taste the smoothie and adjust sweetness or spices as desired, adding more maple syrup or spices if necessary.

          Pour the smoothie into a glass and top with a sprinkle of cinnamon or some crushed nuts for garnish if desired. Enjoy!
