1 lb (450g) fresh mushrooms (button, cremini, or a mix), sliced

1 medium onion, finely chopped

2 cloves garlic, minced

3 tbsp unsalted butter

2 tbsp olive oil

4 cups vegetable or chicken broth

1 cup heavy cream

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

1 tsp salt (adjust to taste)

½ tsp black pepper

2 tbsp all-purpose flour (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, melt the butter and olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook the Mushrooms: Add the sliced mushrooms to the pot. Cook, stirring occasionally, until they release their liquid and become tender, about 8-10 minutes.

      Add Broth and Seasoning: Pour in the vegetable or chicken broth, and add the thyme, salt, and pepper. Bring the mixture to a gentle boil. Reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld together.

        Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth, then return to the pot.
