200g fettuccine pasta

150g bacon, diced

200g mushrooms, sliced (button or cremini)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

1/2 teaspoon red pepper flakes (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.

    Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook for 5-7 minutes, stirring occasionally, until the bacon becomes crispy. Remove the bacon from the skillet and set it aside, leaving the rendered fat in the pan.

      Sauté the Mushrooms: In the same skillet, add the sliced mushrooms to the bacon fat. Sauté for about 5 minutes until they are browned and have released their moisture. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

        Make the Sauce: Reduce the heat to low and pour in the heavy cream, stirring well to combine. Bring to a gentle simmer and let it cook for about 3-4 minutes. Add the grated Parmesan cheese and stir until melted and creamy. If the sauce is too thick, gradually add some reserved pasta water to reach desired consistency.

          Combine Pasta and Sauce: Add the drained fettuccine and crispy bacon back into the skillet. Toss everything together until the pasta is well-coated in the creamy sauce. Season with salt, pepper, and red pepper flakes (if using).
