Creamy Biscoff Truffle Bites

1 cup Biscoff cookie crumbs

1 cup cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1/2 cup Biscoff spread (for filling)

8 oz dark chocolate, chopped (for coating)

1 tablespoon coconut oil (for smoothness)

Sea salt (for garnish, optional)

Instructions
 

Mix the Base: In a medium bowl, combine Biscoff cookie crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined and smooth.

    Form the Truffles: Use a cookie scoop or your hands to shape the mixture into small balls, about 1 inch in diameter. Create a small indentation in the center of each ball.

      Add the Filling: Spoon about 1/2 teaspoon of Biscoff spread into the indentation of each truffle ball. Smooth the edges back over with the cookie mixture to seal the filling inside.

        Chill the Truffles: Place the filled truffle balls on a baking sheet lined with parchment paper. Refrigerate them for about 30 minutes, or until firm.

          Melt the Chocolate: While the truffles are chilling, melt the dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.

            Coat the Truffles: Remove the truffles from the fridge and dip each one into the melted chocolate, ensuring they're fully coated. Use a fork to lift them out and tap off excess chocolate before placing them back on the parchment paper.

              Finish and Garnish: Once all the truffles have been coated, sprinkle a small pinch of sea salt on top of each one while the chocolate is still wet.

                Chill Again: Return the truffles to the fridge for about 15-20 minutes, or until the chocolate coating has completely set.
