8 oz fettuccine or penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 teaspoons Cajun seasoning

Salt and pepper, to taste

1 small onion, finely chopped

4 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: Begin by cooking the fettuccine or penne according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken pieces, season with Cajun seasoning, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for 3-4 minutes until the onion is translucent. Add the garlic and cook for an additional 1-2 minutes until fragrant.

        Make the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer. Add the cherry tomatoes and cook for 3-4 minutes until the tomatoes soften slightly.

          Combine Chicken and Pasta: Return the cooked chicken to the skillet and add the drained pasta. Mix well to coat the pasta and chicken with the creamy sauce. Allow to heat through for another 2-3 minutes.

            Add Parmesan: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with more salt, pepper, or Cajun seasoning if desired.

              Garnish & Serve: Remove from heat and garnish with fresh parsley. Serve hot with extra grated Parmesan on the side if desired.
