Creamy Cajun Sausage Ravioli

12 oz (340g) fresh or frozen cheese ravioli

1 lb (450g) Andouille sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup (240ml) heavy cream

1 cup (100g) shredded Parmesan cheese

2 tablespoons Cajun seasoning

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot of salted boiling water, cook the ravioli according to package instructions until al dente. Drain and set aside.

    In a large skillet over medium heat, heat the olive oil. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and place it on a plate.

      In the same skillet, add the diced onion and bell pepper. Sauté until the vegetables are softened, about 4-5 minutes. Add the minced garlic and cooking for another minute until fragrant.

        Sprinkle in the Cajun seasoning and stir to combine.

          Lower the heat to medium-low, then pour in the heavy cream and bring to a gentle simmer. Mix well and let it cook for about 3-4 minutes until slightly thickened.

            Stir in the Parmesan cheese until melted and smooth. Add salt and pepper to taste.

              Return the cooked sausage to the skillet and gently fold in the cooked ravioli. Toss everything together so the ravioli are well coated in the creamy sauce.

                Cook for an additional 2-3 minutes to heat through.

                  Serve immediately, garnished with freshly chopped parsley.
