8 oz (226 g) cream cheese, softened

1/2 cup (100 g) granulated sugar

1/4 cup (60 ml) sour cream

1 tsp vanilla extract

1/2 cup (60 g) graham cracker crumbs

1/4 cup (56 g) unsalted butter, melted

2 tbsp powdered sugar (for dusting, optional)

Fresh fruit or chocolate shavings (for topping, optional)

Instructions
 

Prepare the Mini Cupcake Tin: Preheat your oven to 325°F (160°C). Grease a mini cupcake tin or line it with mini cupcake liners.

    Make the Crust: In a small bowl, combine the graham cracker crumbs with the melted butter and mix until well combined. Press about a teaspoon of this mixture into the bottom of each mini cupcake liner, forming a crust.

      Prepare the Filling: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Slowly add the granulated sugar, sour cream, and vanilla extract. Mix until fully combined and silky.

        Fill the Cups: Using a spoon or a piping bag, carefully fill each mini crust with the cheesecake filling, leaving a little space at the top as it will expand slightly while baking.

          Bake: Place the mini cupcake tin in the preheated oven and bake for about 15-18 minutes, or until the edges are set and the centers are slightly jiggly. Remove them from the oven and let them cool to room temperature.

            Chill: Once cooled, refrigerate the cheesecake bites for at least 2 hours to allow them to firm up and enhance the flavors.
