1 pound large shrimp, peeled and deveined

1 can (14 oz) coconut milk

1 cup unsweetened shredded coconut

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lime juice

1 tablespoon fish sauce

1 tablespoon brown sugar

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup chopped fresh cilantro, for garnish

Lime wedges, for serving

Cooked jasmine rice or quinoa, for serving

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp, lime juice, fish sauce, garlic, ginger, red pepper flakes, salt, and pepper. Mix well and let marinate for 15-20 minutes.

    Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Coconut Sauce: In the same skillet, add the coconut milk and brown sugar. Stir well to combine and bring it to a gentle simmer.

        Add Shredded Coconut: Stir in the unsweetened shredded coconut and let the sauce simmer for about 5 minutes until it thickens slightly, stirring occasionally.

          Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and gently coat them in the coconut sauce. Allow them to cook together for an additional 2-3 minutes, letting the flavors meld.

            Serve: Transfer the creamy coconut shrimp to a large serving platter. Garnish with fresh cilantro and serve with lime wedges on the side. Pair with jasmine rice or quinoa for a complete meal.
