Creamy Italian Meatball Soup

Ingredients
  

1 lb ground beef (or a mix of beef and pork)

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs

1 large egg

3 cloves garlic, minced

1/2 tsp onion powder

1/2 tsp dried oregano

1/2 tsp dried basil

Salt and pepper to taste

4 cups chicken broth

1 can (14.5 oz) diced tomatoes with Italian herbs

1 cup heavy cream

2 cups fresh spinach

1 cup small pasta (ditalini or orzo work well)

Fresh parsley, chopped (for garnish)

Instructions
 

Make the Meatballs: In a large bowl, combine ground beef, grated Parmesan cheese, breadcrumbs, egg, minced garlic, onion powder, oregano, basil, salt, and pepper. Mix until well incorporated. Form mixture into small meatballs, about 1 inch in diameter. Set aside.

    Brown the Meatballs: In a large pot over medium heat, add a splash of olive oil. Once hot, add the meatballs in batches, taking care not to overcrowd the pan. Brown them on all sides for about 5 minutes. Remove meatballs and set aside on a plate.

      Sauté Vegetables: In the same pot, add a bit more olive oil if needed. Sauté chopped onions (if desired) for a few minutes until translucent. You can also add carrots or celery for extra flavor.

        Add Broth and Tomatoes: Pour in the chicken broth and add the diced tomatoes with their juice. Stir well and bring to a gentle simmer.

          Cook the Pasta: Add the small pasta to the broth and allow it to cook according to the package instructions, generally around 8-10 minutes.

            Return Meatballs: Once the pasta is al dente, carefully return the meatballs to the pot. Simmer for an additional 5-7 minutes until the meatballs are cooked through (internal temperature should reach 160°F).

              Add Cream and Spinach: Stir in the heavy cream and add the fresh spinach to the pot. Cook for another 2-3 minutes until the spinach wilts and the soup is heated through.

                Serve: Taste the soup and adjust seasoning with salt and pepper if necessary. Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy!
