1 cup Arborio rice

2 cups vegetable broth (or chicken broth)

1 cup fresh spinach, chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1/2 teaspoon black pepper

1/4 teaspoon salt (to taste)

1/4 teaspoon nutmeg (optional)

Fresh parsley for garnish (optional)

Instructions
 

Sauté Aromatics: In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Toast the Rice: Add the Arborio rice to the pan and toast for about 1-2 minutes, stirring frequently until the rice is slightly translucent around the edges.

      Simmer the Rice: Pour in the vegetable broth and bring to a gentle simmer. Cook uncovered for about 15-18 minutes, stirring occasionally, until the rice is al dente and has absorbed most of the broth.

        Add Cream and Spinach: Reduce the heat to low and stir in the heavy cream. Gradually add the chopped spinach and cook until wilted, about 2-3 minutes.

          Stir in Cheese and Season: Remove from heat and fold in the grated Parmesan cheese until melted and combined. Season with black pepper, salt, and nutmeg (if using) to taste.

            Serve and Garnish: Spoon the creamy spinach rice into bowls, garnish with freshly chopped parsley, and enjoy immediately!
