12 oz pasta (fettuccine or penne)

1 cup sun-dried tomatoes (packed in oil, drained and chopped)

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic (minced)

1 small onion (finely chopped)

2 tbsp olive oil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves (for garnish)

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes. If using, add the red pepper flakes for a touch of heat.

        Create Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Add the grated Parmesan cheese, stirring continuously until the cheese melts and the sauce becomes creamy. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss well to coat the pasta evenly with the creamy sauce. If needed, add more reserved pasta water to adjust the sauce consistency.

            Serve: Plate the pasta, garnishing with fresh basil leaves and chopped parsley for a burst of color and flavor. Serve warm and enjoy!
