Creamy White Chicken Enchiladas

2 cups cooked and shredded chicken breast

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese, divided

1 cup green enchilada sauce

1/2 cup diced green onions

1 tsp garlic powder

1 tsp onion powder

8 small flour tortillas

Fresh cilantro for garnish

Salt and pepper to taste

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, sour cream, half of the shredded cheddar cheese, diced green onions, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.

    Assemble the Enchiladas: Preheat your oven to 350°F (175°C). Spread a thin layer of green enchilada sauce at the bottom of a 9x13-inch baking dish. Take a tortilla, fill it with about 1/4 cup of the chicken mixture, and roll it up. Place the rolled tortilla seam-side down in the baking dish. Repeat with the remaining tortillas and filling.

      Add Sauce and Cheese: Pour the remaining green enchilada sauce over the top of the rolled enchiladas. Sprinkle the remaining shredded cheddar cheese evenly over the sauce.

        Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 to 15 minutes, or until the cheese is bubbly and slightly golden.

          Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped cilantro before serving. Pair with a side salad or rice for a complete meal.
