Crispy Air Fryer Parmesan Crusted Chicken

Ingredients
  

2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, thyme, basil)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 large egg

1 tablespoon Dijon mustard

Olive oil spray

Prepare the Chicken:

    - Start by placing the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness (about 1/2 inch). This ensures even cooking.

      Make the Breading Mixture:

        - In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix well.

          Prepare the Egg Mixture:

            - In another shallow dish, whisk together the egg and Dijon mustard until blended.

              Bread the Chicken:

                - Dip each chicken breast first into the egg mixture, allowing excess to drip off.

                  - Then, coat both sides with the breadcrumb mixture, pressing down firmly to adhere the crumbs. Repeat with all chicken pieces.

                    Preheat the Air Fryer:

                      - Preheat your air fryer to 400°F (200°C) for about 5 minutes.

                        Cook the Chicken:

                          - Lightly spray both sides of the breaded chicken with olive oil spray. This will help achieve a crispy texture.

                            - Place the chicken in the air fryer basket, ensuring they don’t overlap (you may need to do this in batches). Cook for 10 minutes.

                              Flip and Continue Cooking:

                                - After 10 minutes, carefully flip the chicken breasts over and spray the other side with olive oil. Cook for an additional 5 to 7 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).

                                  Rest and Serve:

                                    - Once cooked, remove the chicken from the air fryer and let it rest for 3 minutes before slicing. Serve warm with your choice of dipping sauce or alongside a fresh salad.
