Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 medium carrot, diced

1 medium green bell pepper, diced

1 small head of green cabbage, chopped (about 4 cups)

1 can (14.5 oz) diced tomatoes (with juice)

1 can (8 oz) tomato sauce

4 cups beef broth (or vegetable broth)

2 tsp dried oregano

1 tsp dried basil

1 tsp smoked paprika

Salt and pepper to taste

1 cup uncooked rice (white or brown)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.

    Stir in the diced onion, garlic, carrot, and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

      Add the chopped cabbage to the pot and stir until it begins to wilt, about 3-4 minutes.

        Pour in the diced tomatoes (with their juice), tomato sauce, and beef broth. Mix in the dried oregano, basil, smoked paprika, along with salt and pepper to taste.

          Bring the soup to a boil, then reduce the heat and stir in the uncooked rice. Cover and let it simmer for 20-25 minutes or until the rice is tender.

            Taste and adjust the seasoning if needed. If the soup is too thick, add a bit more broth or water.

              Serve hot, garnished with fresh parsley on top.
