Ingredients

1 cup canned pumpkin puree

1 cup sweetened condensed milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

1 cup chopped pecans

1 box of yellow cake mix

1 cup caramel sauce (store-bought or homemade)

½ cup unsalted butter, melted

Optional: whipped cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix Pumpkin Mixture: In a large mixing bowl, combine the pumpkin puree, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk until smooth and well combined.

Prepare Baking Dish: Grease a 9x13 inch baking dish. Pour the pumpkin mixture evenly into the dish.

Add Pecans: Sprinkle the chopped pecans evenly over the pumpkin mixture to create a delightful crunchy layer.

Add Cake Mix: Evenly sprinkle the dry yellow cake mix over the pecans and pumpkin filling. Do not stir; just let it sit on top.

Drizzle Caramel: Drizzle the caramel sauce evenly over the cake mix. This will add sweetness and create a gooey texture as it bakes.

Melt Butter: Pour the melted butter evenly over the top of the cake mix. Ensure that as much of the mix as possible is covered with butter for even baking.

Bake: Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the edges are bubbly. The center may still be slightly soft but will firm up as it cools.

Cool & Serve: Allow the cobbler to cool for about 10-15 minutes before serving. This dish is delicious served warm with a dollop of whipped cream on top!

                    Prep Time: 15 minutes | Total Time: 1 hour | Servings: 8-10.
