1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

3 medium potatoes, peeled and cubed

4 cups beef broth

1 cup milk

2 cups shredded cheddar cheese

1 cup frozen corn

2 teaspoons Worcestershire sauce

1 teaspoon mustard (yellow or Dijon)

Salt and pepper to taste

Olive oil for cooking

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the beef: In a large pot, heat a drizzle of olive oil over medium heat. Add the ground beef and cook until fully browned. Drain excess fat if necessary.

    Sauté the vegetables: Add the diced onion and garlic to the pot with the beef. Sauté until the onion becomes translucent, about 5 minutes.

      Add the veggies: Stir in the diced carrots and cubed potatoes; cook for another 5 minutes.

        Pour in broth: Add the beef broth to the pot and bring to a boil. Once boiling, reduce heat to a simmer and cover. Cook until the potatoes and carrots are tender, about 15 minutes.

          Combine milk and cheese: In a separate bowl, whisk together the milk, cheddar cheese, Worcestershire sauce, and mustard until smooth.

            Mix everything together: Slowly pour the cheese mixture into the pot, stirring constantly until the soup is creamy and well combined. Add in the frozen corn and heat through.

              Season and serve: Taste the soup and season with salt and pepper as needed. Serve hot, garnished with fresh parsley for a pop of color and flavor.
