1 lb (450g) boneless chicken thighs, sliced thinly

4 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon gochujang (Korean chili paste)

2 tablespoons rice vinegar

2 green onions, chopped

1 tablespoon sesame seeds

1 tablespoon vegetable oil (for cooking)

Cooked rice, for serving

Lettuce leaves (for wrapping, optional)

Marinate the Chicken: In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, and rice vinegar. Whisk until the sugar is dissolved and the ingredients are fully incorporated. Add the sliced chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes (for best flavor, let it marinate for 2 hours).

    Cook the Chicken: Heat the vegetable oil in a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken in a single layer, ensuring not to overcrowd the pan.
