2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 tablespoon chipotle ranch seasoning (store-bought or homemade)

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

1/2 cup sour cream or Greek yogurt

Fresh cilantro, chopped (for garnish)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, chipotle ranch seasoning, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well coated in the marinade. Cover and let it marinate for at least 30 minutes (or up to 2 hours for better flavor) in the refrigerator.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.
