Ingredients
  

1 pound boneless, skinless chicken thighs, diced

8 ounces fresh mushrooms, sliced (cremini or button)

1 cup wild rice, rinsed

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

Fresh parsley for garnish (optional)

Sauté the Chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken thighs and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.

    Cook the Veggies: In the same pot, add the onions and garlic. Sauté for 3-4 minutes until the onions are translucent. Add the sliced mushrooms and cook for another 5 minutes until they're tender and have released their moisture.

      Combine Ingredients: Stir in the wild rice, thyme, parsley, and the cooked chicken. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce to a simmer, cover, and cook for about 45 minutes or until the wild rice is tender.

        Add Cream: After the wild rice is cooked, stir in the heavy cream. Continue to cook for an additional 5-10 minutes to heat through and thicken slightly. Adjust seasoning with salt and pepper as needed.
